  • 1 pound Italian sausage Use ground or sliced.
  • 1 medium onion, diced Yellow or white onion preferred.
  • 2 medium carrots, diced Adds sweetness.
  • 2 stalks celery, diced
  • 3 cloves garlic, minced For flavor.
  • 4 cups chicken or vegetable broth Adjust based on preference.
  • 1 can (15 oz) white beans, drained and rinsed Cannellini or Great Northern beans work well.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 cups fresh spinach Added for nutrition and color.
  • to taste salt and pepper For seasoning.
  • 2 tablespoons olive oil For sautéing.

Method
 

Preparation
  1. In a large pot, heat olive oil over medium heat.
  2. Add Italian sausage and cook until browned.
  3. Add the diced onion, carrots, and celery, sautéing until the vegetables are softened.
  4. Stir in the minced garlic, cooking for an additional minute until fragrant.
Cooking
  1. Pour in the broth and add the drained white beans, oregano, thyme, salt, and pepper.
  2. Bring to a simmer.
  3. Cook for 20-30 minutes to allow the flavors to meld beautifully.
  4. Stir in fresh spinach just before serving until it wilts down.

Notes

Serve hot; pairs well with crusty Italian bread or a fresh green salad. Garnish with grated Parmesan cheese or cracked black pepper.
