Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 7-inch round cake pans.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs, one at a time, then stir in the vanilla.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk, until well combined.
- Divide the batter between the prepared pans.
Baking
- Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to racks to cool completely.
Assembly
- Once cooled, level the cakes if necessary and stack them with buttercream frosting in between.
- Frost the entire cake with buttercream frosting and use green and brown food coloring to decorate to resemble a safari theme.
- Top with safari animal cake toppers.
- Serve and enjoy!
Notes
Store leftover cake in an airtight container at room temperature for up to three days, or refrigerate for up to a week. For longer storage, freeze the cake wrapped tightly in plastic wrap and aluminum foil for up to three months.
