Ingredients
  

For the cake
  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup whole milk
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • Green and brown food coloring
For decoration
  • Buttercream frosting
  • Safari animal cake toppers (like lions, elephants, etc.)

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 7-inch round cake pans.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs, one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, alternating with the milk, until well combined.
  5. Divide the batter between the prepared pans.
Baking
  1. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to racks to cool completely.
Assembly
  1. Once cooled, level the cakes if necessary and stack them with buttercream frosting in between.
  2. Frost the entire cake with buttercream frosting and use green and brown food coloring to decorate to resemble a safari theme.
  3. Top with safari animal cake toppers.
  4. Serve and enjoy!

Notes

Store leftover cake in an airtight container at room temperature for up to three days, or refrigerate for up to a week. For longer storage, freeze the cake wrapped tightly in plastic wrap and aluminum foil for up to three months.
