  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs room temperature
  • 1 cup whole milk room temperature
  • 0.5 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water added last for moisture
Frosting Ingredients
  • 1 cup homemade strawberry jam
  • 1 cup fresh strawberries, chopped
  • 8 oz cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 0.25 cup strawberry puree or additional jam

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk these dry ingredients together thoroughly.
  3. Add the eggs, milk, oil, and vanilla, and mix until well combined. Stir in the boiling water (the batter will be thin).
  4. Pour the batter evenly into the prepared pans and ensure it's leveled.
Baking
  1. Bake for 30-35 minutes or until a toothpick comes out clean. Allow cakes to cool for 10 minutes in the pans, then transfer to wire racks to cool completely.
Frosting
  1. Beat the softened cream cheese and butter until smooth.
  2. Gradually add the powdered sugar and strawberry puree, mixing until fluffy and spreadable.
Assembly
  1. Once the cakes are completely cool, spread a layer of strawberry jam on top of one layer and add fresh strawberries.
  2. Place the second layer on top and frost the entire cake with the strawberry cream cheese frosting.
  3. Decorate with additional chopped strawberries if desired. Serve and enjoy!

Notes

For a special occasion, consider adding whipped cream or serving with vanilla ice cream. Store in an airtight container up to 3 days at room temperature or refrigerate for up to a week.
