Main ingredients
  • 4 large large russet potatoes Choose potatoes of similar size for even cooking.
  • 2 tablespoons olive oil For rubbing on potatoes.
  • 1 teaspoon salt For enhancing the flavors.
  • 1 teaspoon pepper To taste.
  • 2 tablespoons butter For adding on top of the baked potatoes.
  • 1/2 cup sour cream Optional topping.
  • 1/4 cup chives Finely chopped, for garnish.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes, then poke several holes in each potato with a fork to allow steam to escape while baking.
  3. Rub the potatoes with olive oil and sprinkle generously with salt.
Baking
  1. Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until the skin is crispy and a fork can easily pierce the flesh.
Serving
  1. Remove from the oven and let them cool slightly. Slice them open and add butter, salt, pepper, sour cream, and chives as desired.

Notes

For best results, use large russet potatoes. You can also experiment with toppings such as cheese or bacon. Store any leftovers in the refrigerator for 3-4 days.
