Preparation
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the breadcrumbs and Parmesan cheese together until well combined.
- In another bowl, beat the egg and season with salt and pepper.
- Dip each chicken breast into the egg mixture, allowing any excess egg to drip off, then coat thoroughly with the breadcrumb mixture.
Cooking
- Heat olive oil in a skillet over medium heat, covering the bottom of the pan.
- Sear the chicken breasts on both sides until they turn golden brown, about 3-4 minutes per side.
- Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes or until cooked through and reaches an internal temperature of 165°F (75°C).
Notes
For extra crunch, use panko breadcrumbs instead of traditional breadcrumbs. Let the chicken rest before serving for optimal juiciness.
