Ingredients

Main ingredients
  • 2 pieces chicken breasts Ensure even thickness for uniform cooking.
  • 1 cup breadcrumbs Regular or panko.
  • 1/2 cup grated Parmesan cheese Add more if desired for a cheesier flavor.
  • 1 piece egg Beaten, for coating.
  • to taste none Salt and pepper For seasoning.
  • as needed none Olive oil For frying, ensure it covers the bottom of the pan.

Method

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the breadcrumbs and Parmesan cheese together until well combined.
  3. In another bowl, beat the egg and season with salt and pepper.
  4. Dip each chicken breast into the egg mixture, allowing any excess egg to drip off, then coat thoroughly with the breadcrumb mixture.
Cooking
  1. Heat olive oil in a skillet over medium heat, covering the bottom of the pan.
  2. Sear the chicken breasts on both sides until they turn golden brown, about 3-4 minutes per side.
  3. Transfer the chicken to a baking dish and bake in the preheated oven for 20-25 minutes or until cooked through and reaches an internal temperature of 165°F (75°C).

Notes

For extra crunch, use panko breadcrumbs instead of traditional breadcrumbs. Let the chicken rest before serving for optimal juiciness.
