Ingredients
  

Pastry Base
  • 1 sheet homemade puff pastry Ensure it's cold for best results.
  • Flour For dusting the surface.
Filling
  • 2 pieces ripe peaches, sliced Use ripe peaches for sweeter filling.
  • 4 oz cream cheese, sliced
Glaze
  • 1 tbsp honey
  • 1 tsp cinnamon Sprinkle extra for serving if desired.
  • 1 tsp lemon juice

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface and cut it into four circles to fit into a muffin tin.
  3. Place the pastry circles into the muffin tin and gently press them down.
  4. Layer the cream cheese and peach slices inside each pastry.
  5. In a small bowl, mix honey, cinnamon, and lemon juice together. Drizzle this glaze over the peach-filled tarts.
Baking
  1. Bake for 15-20 minutes or until the pastry is golden brown.
  2. Allow to cool slightly before serving.

Notes

Serve warm or at room temperature. You can serve with a scoop of vanilla ice cream for a delicious combination. These tarts can be stored in an airtight container in the refrigerator for up to 2 days.
