  • 1 serving Just Bare chicken nuggets (air-fried according to package directions) Air-fried for the best texture.
  • 1 cup Good Culture cottage cheese (full-fat preferred, at room temperature) Enhances creaminess.
  • 1/4 cup Rao's marinara sauce Use a high-quality marinara for best flavor.
  • 1/4 cup part-skim shredded mozzarella cheese Sprinkled on top before melting.
  • 1/2 tsp Italian seasoning Adjust according to taste.
  • 1/4 tsp garlic powder Can be adjusted for more flavor.
  • optional Cooked pasta or rice For serving the dish.
  • optional Fresh basil and grated parmesan For topping and added flavor.

Method
 

Preparation
  1. Air fry the chicken nuggets according to the package directions, usually about 8-10 minutes at 400°F.
  2. In a microwave-safe bowl, mix together the cottage cheese, marinara sauce, Italian seasoning, and garlic powder. Stir well but hold off on adding the mozzarella.
  3. Microwave the cottage cheese mixture on high for 1 minute, stopping halfway to stir.
  4. Cut the cooked chicken nuggets into bite-sized pieces and stir them into the warm cottage cheese mixture. Now sprinkle the mozzarella on top.
  5. Microwave for another 30 seconds until the mozzarella is melted.
  6. Serve right away over cooked pasta or rice if desired, and finish with fresh basil and grated parmesan.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave with a splash of water if needed. This dish does not freeze well.
