  • 2 medium sweet potatoes, diced Diced into uniform cubes for even cooking.
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 can black beans, drained and rinsed You can substitute with pinto or kidney beans.
  • 1 cup corn (fresh or frozen) Alternatively replace with diced zucchini.
Toppings
  • 1 avocado, sliced For creaminess.
  • Fresh cilantro, for garnish Adds freshness.
  • Lime wedges, for serving Provides a refreshing zing.
Seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. Toss the diced sweet potatoes with olive oil, chili powder, cumin, salt, and pepper. Place on a baking sheet.
  3. Roast for 20-25 minutes, or until tender.
Assembly
  1. In a large bowl, combine the roasted sweet potatoes, black beans, and corn.
  2. Serve the mixture in bowls topped with avocado slices, cilantro, and lime wedges.

Notes
