Ingredients

Pizza Dough and Toppings
  • 1 lb Pizza dough (store-bought or homemade)
  • 2 cups Cooked chicken breast, shredded or cubed
  • 2 cups Mozzarella cheese, freshly shredded
  • 1/4 cup Parmesan cheese, grated
  • Fresh parsley Fresh parsley for garnish
  • Cornmeal Cornmeal for dusting the pan
White Garlic Sauce
  • 3 tablespoons Unsalted butter
  • 3 tablespoons All-purpose flour
  • 1 1/4 cups Whole milk
  • 4 cloves Garlic, minced
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Red pepper flakes (optional)

Method

Preparation
  1. Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven while it heats.
  2. On a lightly floured surface, roll out your pizza dough into a 12-inch circle.
  3. If the dough snaps back, let it rest for 5 minutes and try again.
  4. Dust a pizza peel or baking sheet with cornmeal to prevent sticking and transfer the dough onto it.
Prepare the White Garlic Sauce
  1. In a small saucepan over medium heat, melt the butter.
  2. Add the minced garlic and sauté for about 1 minute until fragrant but not browned.
  3. Whisk in the flour to form a paste and cook for another minute.
  4. Gradually pour in the milk while whisking constantly to avoid lumps. Continue cooking and stirring until the sauce thickens.
  5. Remove from heat and stir in the parmesan cheese, oregano, salt, and pepper until smooth.
Assemble the Pizza
  1. Spread the garlic white sauce evenly over the prepared pizza dough, leaving a small border for the crust.
  2. Distribute the cooked chicken evenly across the sauce.
  3. Top with a generous layer of shredded mozzarella cheese.
  4. If desired, sprinkle the red pepper flakes over the cheese.
Bake and Garnish
  1. Slide the pizza into the oven and bake for 12 to 15 minutes, or until the crust is golden brown and the cheese is bubbly.
  2. Remove from the oven and let it sit for 2-3 minutes to allow the sauce to set slightly.
  3. Garnish with fresh chopped parsley, slice, and serve hot.

Notes

For extra crispy crust, use a pizza stone and fully preheat your oven. Grate your own cheese from a block for the best melting texture. You can make the white sauce ahead of time; store it in the fridge and reheat with a splash of milk if necessary.
