  • 4 cups watermelon, pureed Choose a ripe, sweet watermelon for best flavor.
  • 1 cup heavy cream
  • 1/2 cup milk
  • 3/4 cup sugar Can reduce to suit taste or substitute with sweeteners.
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 pinch salt

Method
 

Preparation
  1. Blend the pureed watermelon, heavy cream, milk, sugar, vanilla extract, lemon juice, and a pinch of salt in a blender or food processor until smooth.
  2. Pour the mixture into a bowl and let it chill in the refrigerator for about an hour.
  3. Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer's instructions.
  4. Scoop the ice cream into a container and freeze for at least 4 hours or until firm.
  5. Scoop a serving into a bowl, serve, and enjoy!

Notes

Store in an airtight container in the freezer for up to two weeks, best consumed within a week. Use parchment paper on the surface to minimize ice crystals.
