Preparation
- Start by preparing your watermelon. Cut the fruit into uniform 1-inch cubes and place them in a large chilled bowl.
- If you are using red onion, soak the thin slices in cold water for 5 minutes to take away the sharp bite, then pat them dry.
- In a small jar or bowl, whisk together the extra virgin olive oil and the fresh lime juice until they are well combined.
- Drizzle the dressing over the watermelon cubes and toss very gently with a large spoon.
- Add the crumbled feta cheese and the sliced red onion to the bowl.
- Sprinkle the fresh mint leaves over the top.
- Season with a tiny pinch of sea salt and black pepper. Be careful with the salt, as the feta is already quite salty.
- Give the salad one last very gentle toss so you don’t break the cheese too much.
- Serve immediately while the watermelon is still icy cold.
Notes
Serve on a wide, shallow platter rather than a deep bowl. This prevents the watermelon at the bottom from getting crushed. Pairs wonderfully with grilled chicken or vegetables.
