  • 6 cups seedless watermelon, cut into 1-inch cubes
  • 1 cup feta cheese, crumbled or cubed
  • 1/2 cup fresh mint leaves, torn or thinly sliced
  • 1/4 cup red onion, very thinly sliced (optional)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lime juice
  • a pinch sea salt
  • a pinch freshly cracked black pepper

Method
 

Preparation
  1. Start by preparing your watermelon. Cut the fruit into uniform 1-inch cubes and place them in a large chilled bowl.
  2. If you are using red onion, soak the thin slices in cold water for 5 minutes to take away the sharp bite, then pat them dry.
  3. In a small jar or bowl, whisk together the extra virgin olive oil and the fresh lime juice until they are well combined.
  4. Drizzle the dressing over the watermelon cubes and toss very gently with a large spoon.
  5. Add the crumbled feta cheese and the sliced red onion to the bowl.
  6. Sprinkle the fresh mint leaves over the top.
  7. Season with a tiny pinch of sea salt and black pepper. Be careful with the salt, as the feta is already quite salty.
  8. Give the salad one last very gentle toss so you don’t break the cheese too much.
  9. Serve immediately while the watermelon is still icy cold.

Notes

Serve on a wide, shallow platter rather than a deep bowl. This prevents the watermelon at the bottom from getting crushed. Pairs wonderfully with grilled chicken or vegetables.
