Ingredients
  

For the Filling
  • 1 lb Spicy andouille sausage Cooked and browned
  • 1 cup Sweet potatoes Cooked and mashed
  • 1 cup Sharp cheddar cheese Shredded
  • 1 cup Bell peppers Diced
  • 1 tbsp Cajun seasoning
  • to taste Salt
  • to taste Pepper
For the Egg Rolls
  • 12 pieces Egg roll wrappers
  • as needed cup Vegetable oil For frying

Method
 

Preparation
  1. In a pan, cook the andouille sausage until browned.
  2. In a bowl, combine the cooked sausage, mashed sweet potatoes, cheddar cheese, and diced bell peppers. Season with salt, pepper, and Cajun seasoning.
  3. Place a spoonful of the filling in the center of each egg roll wrapper.
  4. Moisten the edges with water and roll tightly, folding in the sides.
Cooking
  1. Heat oil in a deep fryer or skillet to 350°F (175°C).
  2. Fry the egg rolls until golden brown and crispy, about 3-4 minutes per side.
  3. Drain on paper towels and serve hot.

Notes

For an extra crunchy texture, double fry the egg rolls. You can substitute the andouille sausage with a milder sausage or ground turkey. Ensure you seal the edges of the egg rolls well.
