- In a pan, cook the andouille sausage until browned.
- In a bowl, combine the cooked sausage, mashed sweet potatoes, cheddar cheese, and diced bell peppers. Season with salt, pepper, and Cajun seasoning.
- Place a spoonful of the filling in the center of each egg roll wrapper.
- Moisten the edges with water and roll tightly, folding in the sides.
Cooking
- Heat oil in a deep fryer or skillet to 350°F (175°C).
- Fry the egg rolls until golden brown and crispy, about 3-4 minutes per side.
- Drain on paper towels and serve hot.
Notes
For an extra crunchy texture, double fry the egg rolls. You can substitute the andouille sausage with a milder sausage or ground turkey. Ensure you seal the edges of the egg rolls well.
