Ingredients
  

For the Spring Rolls
  • 8 pieces Rice paper wrappers
  • 2 cups Mixed vegetables (like carrots, cucumber, bell peppers, and lettuce) Cut into thin strips
  • 1 cup Fresh herbs (like mint and cilantro) Chopped
  • 1 cup Rice noodles Optional
For the Peanut Dipping Sauce
  • 1/2 cup Peanut butter
  • 2 tablespoons Soy sauce
  • 2 tablespoons Lime juice Freshly squeezed
  • 1 tablespoon Honey or sugar To taste
  • 2 tablespoons Water To thin the sauce

Method
 

Preparation of Sauce
  1. Mix peanut butter, soy sauce, lime juice, honey or sugar, and a bit of water until smooth to create the peanut dipping sauce.
Assembling Spring Rolls
  1. Dip rice paper wrappers in warm water until softened, then lay them flat on a clean surface.
  2. Place a handful of mixed vegetables, fresh herbs, and rice noodles (if using) on the lower part of each wrapper.
  3. Fold in the sides over the filling, then roll tightly from the bottom up.
Serving
  1. Serve the spring rolls with the peanut dipping sauce on the side for dipping.

Notes

Store leftovers separately in the refrigerator; the spring rolls can last up to 2 days, while the peanut sauce can last a week.
