Preparation of Sauce
- Mix peanut butter, soy sauce, lime juice, honey or sugar, and a bit of water until smooth to create the peanut dipping sauce.
Assembling Spring Rolls
- Dip rice paper wrappers in warm water until softened, then lay them flat on a clean surface.
- Place a handful of mixed vegetables, fresh herbs, and rice noodles (if using) on the lower part of each wrapper.
- Fold in the sides over the filling, then roll tightly from the bottom up.
Serving
- Serve the spring rolls with the peanut dipping sauce on the side for dipping.
Notes
Store leftovers separately in the refrigerator; the spring rolls can last up to 2 days, while the peanut sauce can last a week.
