- In a bowl, mix the black beans, cooked rice, taco seasoning, salt, and pepper until well combined.
- Heat olive oil in a skillet over medium heat.
- Warm tortillas in the skillet for about 30 seconds on each side until they are soft.
- Fill each tortilla with the bean mixture and sprinkle cheese on top.
- Roll up the tortillas and cook seam side down in the skillet until the cheese is melted and the tortilla is crispy, about 2-3 minutes.
- Serve with optional toppings of your choice.
Notes
Keep burritos warm in a low oven if making a large batch. For extra crispy tortillas, spray the outside with cooking oil before cooking.
