  • 4 large tortillas
  • 1 can black beans, rinsed and drained
  • 1 cup cooked rice
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon taco seasoning
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

  • lettuce

Method
 

Preparation
  1. In a bowl, mix the black beans, cooked rice, taco seasoning, salt, and pepper until well combined.
  2. Heat olive oil in a skillet over medium heat.
  3. Warm tortillas in the skillet for about 30 seconds on each side until they are soft.
  4. Fill each tortilla with the bean mixture and sprinkle cheese on top.
  5. Roll up the tortillas and cook seam side down in the skillet until the cheese is melted and the tortilla is crispy, about 2-3 minutes.
  6. Serve with optional toppings of your choice.

Notes

Keep burritos warm in a low oven if making a large batch. For extra crispy tortillas, spray the outside with cooking oil before cooking.
