Ingredients
  

Wrap Ingredients
  • 2 pieces Tortilla wraps Use any type you prefer.
  • 1/2 cup Hummus Can substitute with guacamole or other spreads.
  • 1 medium Cucumber, sliced
  • 1 medium Bell peppers, sliced Any color bell pepper works.
  • 1/2 cup Carrots, shredded
  • 1 medium Avocado, sliced Optional, can add more if desired.
  • 1 cup Spinach or mixed greens
  • to taste Salt and pepper
  • 1 tablespoon Lemon juice Optional for added flavor.

Method
 

Preparation
  1. Spread hummus evenly on each tortilla wrap.
  2. Layer the sliced cucumbers, bell peppers, carrots, avocado, and spinach on top of the hummus.
  3. Sprinkle salt, pepper, and lemon juice over the vegetables.
  4. Roll the wrap tightly, tucking in the sides as you go.
  5. Slice the wrap in half and serve immediately or wrap in foil to take on the go.

Notes

To keep your wraps fresh, store them in the fridge for up to two days wrapped tightly to prevent drying out. Avoid adding ingredients that may become soggy until you're ready to eat.
