Ingredients

  • 1 block firm tofu Press to remove excess moisture.
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon salt Adjust to taste.
  • 1 tablespoon nutritional yeast Can be substituted or omitted.
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder

Method
 

Preparation
  1. Press the tofu to remove excess moisture, then crumble it into a mixing bowl.
  2. Add lemon juice, olive oil, apple cider vinegar, salt, nutritional yeast, oregano, and garlic powder to the bowl.
  3. Mix everything well until the tofu is evenly coated with the mixture.
  4. Let it sit in the refrigerator for at least 30 minutes to allow the flavors to meld.
  5. Serve the vegan feta cheese in salads, on toast, or as a snack.

Notes

Store in an airtight container in the refrigerator for up to one week. For best flavor, consume within three days. Can be kept submerged in olive oil for moisture.
