  • 1.5 cups sugar
  • 0.5 cups unsweetened cocoa powder
  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs Room temperature
  • 1 cup whole milk Room temperature
  • 0.5 cups vegetable oil Can substitute with coconut oil or applesauce
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Essential for moisture
Decoration
  • 1 package fondant For covering the cake
  • touch red food coloring For coloring the fondant
  • 1 heart-shaped cake mold

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix well until smooth.
  4. Gradually stir in boiling water until combined. The batter will be thin.
  5. Pour batter evenly into the prepared pans.
Baking
  1. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow cakes to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
Assembly
  1. Once cooled, level the cakes if necessary and place one layer on a serving plate.
  2. Spread a layer of fondant or frosting before placing the second layer on top.
  3. Cover the entire cake with fondant and decorate with red food coloring or other Valentine's Day designs using additional fondant.
Serving
  1. Slice the cake into generous pieces. Serve plain or with a scoop of vanilla ice cream.
  2. For added flair, drizzle warm chocolate sauce or pour a berry coulis over each slice.
  3. Sprinkle with edible glitter or sugar crystals for an extra sparkle.

Notes

To store, keep in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Bring back to room temperature before serving. Use room temperature ingredients for a smoother batter. Don’t skip the boiling water for moisture.
