Preparation
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix well until smooth.
- Gradually stir in boiling water until combined. The batter will be thin.
- Pour batter evenly into the prepared pans.
Baking
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow cakes to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
Assembly
- Once cooled, level the cakes if necessary and place one layer on a serving plate.
- Spread a layer of fondant or frosting before placing the second layer on top.
- Cover the entire cake with fondant and decorate with red food coloring or other Valentine's Day designs using additional fondant.
Serving
- Slice the cake into generous pieces. Serve plain or with a scoop of vanilla ice cream.
- For added flair, drizzle warm chocolate sauce or pour a berry coulis over each slice.
- Sprinkle with edible glitter or sugar crystals for an extra sparkle.
Notes
To store, keep in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Bring back to room temperature before serving. Use room temperature ingredients for a smoother batter. Don’t skip the boiling water for moisture.
