Ingredients
  

For the Tzatziki Dressing
  • 1 cup Greek yogurt Choose plain Greek yogurt for best flavor.
  • 2 cloves garlic, minced For a stronger garlic flavor, add more according to taste.
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice Freshly squeezed lemon juice is recommended.
  • 2 tablespoons fresh dill, chopped Feel free to substitute with fresh mint for a twist.
  • to taste salt and pepper
For the Salad
  • 2 cups cooked chicken, shredded Leftover rotisserie chicken can be used.
  • 1 cup cucumber, diced Use English cucumber for a sweeter flavor.

Method
 

Preparation
  1. In a bowl, combine Greek yogurt, minced garlic, olive oil, lemon juice, dill, salt, and pepper to make the tzatziki dressing.
  2. In another bowl, mix the shredded chicken and diced cucumber.
  3. Pour the tzatziki dressing over the chicken and cucumber, and stir until well combined.
  4. Serve chilled, optionally garnished with additional dill.

Notes

For extra flavor, try adding smoked paprika or hot sauce to the dressing. Store in an airtight container in the refrigerator for up to three days, keeping dressing separate to maintain cucumber crispness.
