Turkish Style Mezze Board

Ingredients
  

For the Hummus
  • 1 can 1 can (15 oz / 425 g) chickpeas, drained and rinsed
  • 1/4 cup 1/4 cup tahini
  • 2 tbsp 2 tbsp fresh lemon juice
  • 2 tbsp 2 tbsp extra virgin olive oil
  • 1 clove 1 garlic clove
  • 1/2 tsp 1/2 tsp ground cumin
  • 2–3 tbsp 2–3 tbsp cold water
  • Salt and freshly ground black pepper
For the Muhammara
  • 2 2 roasted red bell peppers, peeled
  • 1 cup 1 cup toasted walnuts
  • 1/2 cup 1/2 cup fresh breadcrumbs
  • 2 tbsp 2 tbsp pomegranate molasses
  • 2 tbsp 2 tbsp extra virgin olive oil
  • 1 clove 1 garlic clove
  • 1 tsp 1 tsp Aleppo pepper (or mild chili flakes)
  • 1/2 tsp 1/2 tsp ground cumin
  • Salt and freshly ground black pepper
For the Warm Flatbread
  • 4 4 Turkish flatbreads or pita breads
  • 2 tbsp 2 tbsp extra virgin olive oil
  • 1 tsp 1 tsp za’atar seasoning
  • 1/2 tsp 1/2 tsp garlic powder
  • Pinch of flaky sea salt
For the Mezze Board
  • 1 cup 1 cup cucumber slices
  • 1 cup 1 cup cherry tomatoes
  • 1/2 cup 1/2 cup Kalamata olives
  • 1/2 cup 1/2 cup green olives
  • 1/2 cup 1/2 cup feta cheese cubes
  • 1/2 cup 1/2 cup stuffed grape leaves
  • 1/2 cup 1/2 cup marinated artichoke hearts
  • 1/4 cup 1/4 cup pepperoncini peppers
  • 1/4 cup 1/4 cup sliced radishes
  • Fresh parsley
  • Fresh mint leaves
  • Pomegranate arils (optional)
  • Toasted pistachios (optional)
  • Extra virgin olive oil
  • Sumac

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Blend the chickpeas, tahini, lemon juice, olive oil, garlic, cumin, cold water, salt, and black pepper until smooth and creamy. Transfer to a serving bowl and create decorative swirls.
  3. Blend the roasted peppers, walnuts, breadcrumbs, pomegranate molasses, olive oil, garlic, Aleppo pepper, cumin, salt, and pepper until mostly smooth. Spoon into another serving bowl and drizzle with olive oil.
  4. Brush the flatbreads with olive oil and sprinkle with za’atar, garlic powder, and flaky sea salt.
Cooking
  1. Bake the flatbreads for 6–8 minutes until warm and lightly crisp, then cut into wedges.
Assembly
  1. Place the hummus and muhammara bowls in the center of a large serving board.
  2. Arrange the warm flatbread, cucumber slices, cherry tomatoes, olives, feta, grape leaves, artichokes, pepperoncini, and radishes around the bowls.
  3. Garnish with parsley, mint, pomegranate arils, toasted pistachios, a drizzle of olive oil, and a sprinkle of sumac before serving immediately.

Notes

Serve as an appetizer, pair with herbal tea or fizzy lemon water. Store leftovers in airtight containers; dips can be frozen.
