Turkish Style Mezze Board

Ingredients
  

For the Hummus
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic
  • 1/2 tsp ground cumin
  • 2-3 tbsp cold water
  • to taste Salt and freshly ground black pepper
For the Muhammara
  • 2 roasted red bell peppers, peeled
  • 1 cup toasted walnuts
  • 1/2 cup fresh breadcrumbs
  • 2 tbsp pomegranate molasses
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic
  • 1 tsp Aleppo pepper (or mild chili flakes)
  • 1/2 tsp ground cumin
  • to taste Salt and freshly ground black pepper
For the Warm Flatbread
  • 4 pieces Turkish flatbreads or pita breads
  • 2 tbsp extra virgin olive oil
  • 1 tsp za’atar seasoning
  • 1/2 tsp garlic powder
  • pinch flaky sea salt
For the Mezze Board
  • 1 cup cucumber slices
  • 1 cup cherry tomatoes
  • 1/2 cup Kalamata olives
  • 1/2 cup green olives
  • 1/2 cup feta cheese cubes
  • 1/2 cup stuffed grape leaves
  • 1/2 cup marinated artichoke hearts
  • 1/4 cup pepperoncini peppers
  • 1/4 cup sliced radishes
  • to taste Fresh parsley
  • to taste Fresh mint leaves
  • to taste Pomegranate arils (optional)
  • to taste Toasted pistachios (optional)
  • to taste Extra virgin olive oil
  • to taste Sumac

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Blend the chickpeas, tahini, lemon juice, olive oil, garlic, cumin, cold water, salt, and black pepper until smooth and creamy. Transfer to a serving bowl and create decorative swirls.
  3. Blend the roasted peppers, walnuts, breadcrumbs, pomegranate molasses, olive oil, garlic, Aleppo pepper, cumin, salt, and pepper until mostly smooth. Spoon into another serving bowl and drizzle with olive oil.
  4. Brush the flatbreads with olive oil and sprinkle with za’atar, garlic powder, and flaky sea salt.
  5. Bake the flatbreads for 6–8 minutes until warm and lightly crisp, then cut into wedges.
Assembly
  1. Place the hummus and muhammara bowls in the center of a large serving board.
  2. Arrange the warm flatbread, cucumber slices, cherry tomatoes, olives, feta, grape leaves, artichokes, pepperoncini, and radishes around the bowls.
  3. Garnish with parsley, mint, pomegranate arils, toasted pistachios, a drizzle of olive oil, and a sprinkle of sumac before serving immediately.

Notes

Use fresh ingredients for optimal taste. Customize your board with seasonal items. Make hummus and muhammara a day ahead for convenience.
