Turkey Pumpkin White Bean Chili

Ingredients
  

Chili Base
  • 1 tablespoon olive oil For sautéing
  • 1 pound lean ground turkey Can substitute with ground chicken or plant-based meat alternative
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (15 ounces) 100% pure pumpkin puree Can substitute with butternut squash puree
  • 2 cans (15 ounces each) white beans (cannellini or Great Northern), rinsed and drained Can substitute with kidney beans or chickpeas
  • 1 can (14.5 ounces) diced tomatoes with their juice
  • 2 cups low-sodium chicken or turkey broth Ensure gluten-free if necessary
Spices
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

Method
 

Preparation
  1. Heat the olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add the ground turkey to the pot and cook until browned, breaking it into small crumbles.
  3. Add the diced onion and bell pepper; sauté for about 5 to 7 minutes until soft.
  4. Stir in the minced garlic and cook for 1 minute until fragrant.
  5. Add chili powder, cumin, oregano, and smoked paprika, stirring to coat the meat and vegetables.
Cooking
  1. Pour in pumpkin puree, white beans, diced tomatoes, and broth, stirring until well combined.
  2. Bring the mixture to a gentle boil, then reduce heat to low.
  3. Cover and let the chili simmer for 20 to 30 minutes, stirring occasionally.
  4. Taste and add salt and black pepper as needed.
  5. Serve hot with your favorite toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat before serving.
