Main Ingredients
  • 12 oz Tortellini Cook according to package instructions
  • 4 cups Romaine lettuce, chopped
  • 1 cup Caesar dressing Use store-bought or homemade
  • 1 tbsp Anchovy paste Optional
  • 1/2 cup Parmesan cheese, grated
  • 1 cup Croutons Add right before serving
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 2 cloves Garlic, minced

Method
 

Preparation
  1. Cook the tortellini according to package instructions, then drain and let cool.
  2. In a large bowl, combine the cooked tortellini and chopped Romaine lettuce.
  3. In a separate bowl, mix the Caesar dressing with anchovy paste (if using), olive oil, lemon juice, and minced garlic.
  4. Pour the dressing over the tortellini and Romaine, and toss to coat.
  5. Top with Parmesan cheese and croutons before serving.

Notes

Serve chilled for a refreshing taste. Store leftovers in an airtight container for 2-3 days. Keep croutons separate to maintain crunch.
