Ingredients
  

Base Ingredients
  • 4 cups mixed greens (spinach, arugula, or romaine) Use a mix of leafy greens.
  • 1 cup quinoa or brown rice Cook according to package instructions.
Protein and Vegetables
  • 1 can chickpeas or black beans Rinsed and drained.
  • 1 medium avocado Diced.
  • 1 cup cherry tomatoes Halved.
  • 1 medium cucumber Chopped.
  • 1 medium bell pepper Chopped.
  • 1 small red onion Chopped.
Toppings
  • 1/2 cup feta cheese or a non-dairy alternative Crumble on top.
  • 1/4 cup nuts or seeds (such as almonds, walnuts, or sunflower seeds) For added crunch.
  • 2 tablespoons fresh herbs (like parsley, cilantro, or basil) Chopped.
Dressing
  • 3 tablespoons olive oil You can substitute with another healthy oil.
  • 2 tablespoons lemon juice or balsamic vinegar

Method
 

Preparation
  1. Begin by cooking your quinoa or brown rice according to package instructions. Let it cool.
  2. While your grains are cooling, chop your mixed greens, cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
Assembly
  1. In a large bowl, combine the mixed greens, cooked quinoa or brown rice, and chopped vegetables.
  2. Rinse and drain the chickpeas or black beans and add them to the bowl for added protein.
  3. Dice the avocado and crumble the feta cheese on top.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle the dressing over the salad and toss gently to combine.
  5. Lastly, sprinkle your nuts or seeds and fresh herbs on top for added crunch and flavor.

Notes

Store any leftovers in an airtight container in the refrigerator. The salad is best enjoyed within 2 days. Keep the dressing separate until ready to eat to prevent the greens from becoming soggy.
