Preparation
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a bowl, mix peanut butter, soy sauce, honey, lime juice, garlic, and ginger to create the peanut sauce.
- Season chicken with salt and pepper.
Cooking
- Heat a pan over medium-high heat with a little oil and sear the chicken for 6-7 minutes on each side until fully cooked.
- Remove from heat and let rest before slicing.
- In the same pan, add the sliced vegetables and sauté for 2-3 minutes until just tender.
Assembly
- Toss the cooked noodles with the peanut sauce and add the sautéed vegetables.
- Serve in bowls, topped with sliced chicken, crushed peanuts, and fresh cilantro.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Add a splash of water when reheating to prevent noodles from drying out.
