  • 2 pieces boneless, skinless chicken breasts Choose fresh, high-quality chicken.
  • 8 oz rice noodles Can substitute with gluten-free noodles.
  • 1 cup bell peppers, sliced Use a mix of colors for visual appeal.
  • 1 cup carrots, julienned
  • 1/2 cup cucumber, sliced For a refreshing crunch.
  • 2 pieces green onions, sliced Add both white and green parts for flavor.
Peanut Sauce Ingredients
  • 1/4 cup peanut butter Creamy or crunchy, based on preference.
  • 3 tbsp soy sauce Use gluten-free soy sauce for gluten-free diets.
  • 2 tbsp honey or maple syrup Adjust based on desired sweetness.
  • 1 tbsp lime juice Fresh lime juice enhances flavor.
  • 1 clove garlic, minced Fresh garlic preferred.
  • 1 tsp ginger, grated Fresh ginger adds depth.
Garnish
  • to taste salt and pepper Season to your preference.
  • to taste crushed peanuts for garnish Provides crunch.
  • to taste fresh cilantro for garnish Chopped finely before serving.

Method
 

Preparation
  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a bowl, mix peanut butter, soy sauce, honey, lime juice, garlic, and ginger to create the peanut sauce.
  3. Season chicken with salt and pepper.
Cooking
  1. Heat a pan over medium-high heat with a little oil and sear the chicken for 6-7 minutes on each side until fully cooked.
  2. Remove from heat and let rest before slicing.
  3. In the same pan, add the sliced vegetables and sauté for 2-3 minutes until just tender.
Assembly
  1. Toss the cooked noodles with the peanut sauce and add the sautéed vegetables.
  2. Serve in bowls, topped with sliced chicken, crushed peanuts, and fresh cilantro.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Add a splash of water when reheating to prevent noodles from drying out.
