Ingredients

For the Cake
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup vegetable oil
  • 4 large eggs (about 200 grams)
  • 1 cup buttermilk (you can make your own by adding vinegar to milk)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup chopped pecans
For the Cream Cheese Frosting
  • 8 ounces cream cheese
  • 1/2 cup unsalted butter
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

Method

Mixing the Batter
  1. Preheat your oven to 350°F (175°C) and grease a large bundt pan.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix well to incorporate all the dry ingredients evenly.
Baking to Perfection
  1. Pour the batter into the prepared bundt pan, smoothing the top with a spatula.
  2. Bake for about 50-60 minutes, or until a toothpick inserted comes out clean.
Crafting the Creamy Frosting
  1. While the cake cools, prepare the cream cheese frosting by beating together the softened cream cheese and butter until creamy and smooth.
  2. Gradually add the powdered sugar and vanilla extract, continuing to beat until fluffy.
Frosting the Cake
  1. Once the cake is completely cooled, place it on a serving platter.
  2. Spread the cream cheese frosting generously over the top, allowing it to cascade down the sides.
Serving Your Masterpiece
  1. Slice into your Texas Tornado Cake, and serve each slice with a warm cup of tea or coffee.

Notes

Use room temperature ingredients for better mixing. Don’t overmix the batter to avoid a tough cake. Ovens can vary, so keep an eye on the cake's doneness in the final minutes of baking.
