- In a large pot, brown the ground beef or turkey with the chopped onion over medium heat. Drain excess fat.
- Stir in the diced tomatoes, black beans, kidney beans, corn, taco seasoning, and broth.
- Bring to a boil, then reduce heat and let it simmer for 20-30 minutes.
- Season with salt and pepper to taste.
- Serve hot, topped with your choice of toppings.

Leftover taco soup can be stored in an airtight container in the refrigerator for 4-5 days or frozen for up to 3 months.
