  • 1 cup black beans Drained and rinsed.
  • 1 cup corn Drained.
  • 1 cup diced tomatoes Fresh or canned.
  • 1 cup shredded cheese Choose your favorite type of cheese.
  • 1/2 cup diced onions Adjust quantity based on preference.
  • 1 bag Doritos Crushed for topping.
  • to taste sour cream and salsa Optional toppings.

Method
 

Cooking the Meat
  1. In a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
  2. Add taco seasoning and water as directed on the package; stir and simmer for about 5 minutes.
Combining Ingredients
  1. In a large bowl, combine the cooked rice, black beans, corn, diced tomatoes, and the cooked meat mixture.
  2. Stir to combine and heat through if desired.
Serving
  1. Serve the mixture in bowls, topped with shredded cheese, diced onions, and crushed Doritos.
  2. Add sour cream and salsa if desired.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with a splash of water to prevent drying out. Add toppings like sour cream and salsa prior to serving for freshness.
