Method
Prepare the Rice
- Rinse 1 cup of white rice under cold water in a fine-mesh strainer.
- In a medium saucepan, combine the rinsed rice with 2 cups of water.
- Bring the water to a boil over high heat.
- Once boiling, reduce the heat to low, cover the saucepan with a lid, and let the rice simmer for 18-20 minutes.
- Remove the saucepan from the heat and let it sit covered for an additional 5 minutes.
Cook the Beef
- In a separate skillet, cook 1 pound of ground beef over medium-high heat until browned and cooked through.
- Add 1 packet of taco seasoning to the cooked ground beef and stir well to combine.
Prepare the Toppings
- Prepare the toppings: shred 1 cup of cheddar cheese, dice 1/2 cup of tomatoes, 1/4 cup of red onion, and slice 1/4 cup of black olives.
- Chop 1/4 cup of cilantro for garnish.
- Crush 2 cups of Doritos in a resealable plastic bag using a rolling pin or the back of a spoon.
Assemble the Bowls
- Divide the cooked rice among serving bowls.
- Top each bowl with the seasoned ground beef.
- Add the shredded cheddar cheese, diced tomatoes, red onion, black olives, and chopped cilantro.
- Sprinkle the crushed Doritos over the top of each bowl.
- Finish the bowls with a dollop of sour cream and a spoonful of salsa.
Notes
For storage, leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat with a splash of water to keep the rice moist. Add Doritos just before serving for crunch. Custom toppings can be added according to preference.
