  • 1 lb ground beef or ground turkey Use lean meat for a healthier option.
  • 1 oz taco seasoning Customize to your taste.
  • 1/2 cup water
  • 2 cups cooked white or brown rice You can use cauliflower rice for a low-carb version.
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels Fresh, canned, or frozen.
  • 1 cup shredded cheddar or Mexican blend cheese Pepper jack provides a zesty flavor.
  • 2 cups crushed Nacho Cheese Doritos Can substitute with other chips.
  • 1/2 cup salsa
  • 1/2 cup sour cream
  • to taste Fresh cilantro, chopped For garnish.
Optional Toppings
  • to taste Diced tomatoes
  • to taste Shredded lettuce
  • to taste Diced avocado or guacamole
  • to taste Sliced green onions
  • to taste Pickled jalapeños

Method
 

Preparation
  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat.
  2. Add the taco seasoning and 1/2 cup water, stirring to combine. Simmer for 5 minutes until thickened.
Assembly
  1. Divide the cooked rice evenly between 4 bowls.
  2. Top each bowl with a portion of the taco-seasoned ground beef.
  3. Add black beans, corn, and shredded cheese over the beef layer.
  4. Sprinkle each bowl with a generous handful of crushed Doritos.
  5. Add a spoonful of salsa and a dollop of sour cream to each bowl.
  6. Garnish with fresh cilantro and any additional toppings you like.
  7. Serve immediately and enjoy with extra Doritos on the side if desired!

Notes

Leftovers should be placed in airtight containers. Beef, rice, and veggies can last in the fridge for 3-4 days. Keep Doritos separate to maintain crunch.
