Ingredients
  

For the base and toppings
  • 2 cups cooked long-grain white rice (or brown rice) Make sure it's warm.
  • 1 cup cherry tomatoes, halved Freshly chopped.
  • 1 avocado sliced Best added just before serving.
  • Fresh cilantro to taste chopped
  • Sour cream for topping optional For serving.
  • Salsa for topping optional For serving.
For the protein and beans
  • 1 lb lean ground beef (or ground turkey) Cook until browned.
  • 1 can black beans, drained and rinsed (15 oz) Adds fiber and protein.
  • 1 cup frozen corn, thawed To be warmed with the beans.
  • 1 packet taco seasoning (or 2 tbsp homemade blend) For flavor.
  • 1/2 cup water To mix with the seasoning.
For the cheese
  • 1 cup shredded cheddar or Mexican blend cheese To melt over the hot meat.

Method
 

Preparation
  1. Start by ensuring your rice is cooked and warm. If using leftover rice, microwave with a splash of water.
  2. Wash and chop cherry tomatoes, slice avocado, and chop fresh cilantro. Set aside in small bowls.
Cooking the Protein
  1. Place a large skillet over medium-high heat and add the ground beef. Cook until browned, breaking it into small crumbles.
  2. Drain excess grease. Lower heat to medium and stir in taco seasoning and 1/2 cup of water. Simmer for about 5 minutes until thickened.
Heating the Beans and Corn
  1. Push seasoned meat to one side of the skillet. Add black beans and corn to the other side, stirring gently until warmed through.
Assembly
  1. Divide warm rice evenly among bowls. Top with seasoned beef, followed by beans and corn.
  2. Sprinkle shredded cheese over the meat to melt.
  3. Arrange tomatoes and avocado on top, garnishing with cilantro, sour cream, and salsa. Serve with lime juice.

Notes

For best texture, keep fresh toppings like avocado and sour cream separate from the rice and meat if meal prepping. For added flavor, season rice while it cooks.
