  • 1 pound ground beef (halal-certified) High-quality ground beef for best flavor.
  • 2 cups cooked white or brown rice Can use leftovers or freshly made rice.
  • 1 packet (or 3 tablespoons) taco seasoning Store-bought or homemade seasoning.
  • 1/2 cup water To help simmer the beef.
  • 1 can (15 oz) black beans, rinsed and drained Removes excess salt.
  • 1 cup frozen corn, thawed or charred For added flavor, sauté corn before adding.
  • 1 cup shredded cheddar cheese For topping.
  • 1 cup cherry tomatoes, halved Fresh and juicy.
  • 1/2 cup sour cream Can substitute with Greek yogurt.
  • 1/4 cup fresh cilantro, chopped Optional for garnish.
  • 1 lime, cut into wedges For squeezing over the top.
  • 1 avocado, sliced Best added just before serving.

Method
 

Cooking the Beef
  1. Place a large skillet over medium-high heat.
  2. Add the ground beef and cook, breaking it apart with a wooden spoon, until it is no longer pink.
  3. Drain any extra grease from the pan.
  4. Stir in the taco seasoning and 1/2 cup of water.
  5. Lower the heat and let it simmer for about 5 minutes until the sauce thickens and coats the beef beautifully.
Preparing the Bowls
  1. Ensure your cooked rice is warm.
  2. Prepare four bowls. Divide the warm rice evenly among the bowls as the base layer.
  3. Top the rice with a generous scoop of the seasoned beef.
  4. Add the black beans, corn, cherry tomatoes, and sliced avocado to each bowl, arranging them in neat sections for a beautiful presentation.
  5. Sprinkle shredded cheddar cheese over the warm beef so it starts to melt slightly.
  6. Add a dollop of sour cream and a sprinkle of fresh cilantro to the center of each bowl.
  7. Serve immediately with lime wedges on the side to squeeze over the top for a bright, zesty finish.

Notes

Rinse beans before using. Sear beef for better flavor. Store toppings separately for freshness. Can freeze seasoned beef for later use.
