  • 1 lb ground beef Use lean ground beef for a healthier option.
  • 1 can black beans, drained and rinsed
  • 2 cups cooked rice Any type of rice can be used.
  • 1 cup diced tomatoes Fresh or canned tomatoes work well.
  • 1 cup corn Canned or frozen corn can be used.
  • 1 cup shredded cheese Cheddar cheese is recommended.
  • 1 large avocado, diced For creaminess.
  • 1 cup lettuce, shredded Iceberg or romaine works well.
  • 1 packet taco seasoning Adjust spice level as preferred.
  • to taste Sour cream and salsa For serving.

Method
 

Cooking the Beef
  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Stir in the taco seasoning and cook according to package instructions until fragrant and well combined.
Assembling the Bowl
  1. In a large serving bowl, layer the cooked rice, seasoned beef, black beans, diced tomatoes, corn, and additional toppings such as shredded cheese, diced avocado, and shredded lettuce.
  2. Serve with sour cream and salsa on the side. Customize with favorite toppings!

Notes

Store leftover components in separate airtight containers for up to 3 days. Reheat the beef and rice mixture before serving.
