  • 1 cup rice Can use white or brown rice
  • 1 lb ground chicken or beef Choose based on preference
  • 1 can black beans, drained and rinsed Can substitute with pinto or kidney beans
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 packet taco seasoning
  • 1 cup shredded cheese Any preferred type
  • 1 avocado, diced
  • 1/4 cup chopped cilantro Fresh
  • Salt and pepper To taste

Method
 

Preparation
  1. Cook the rice according to package instructions.
  2. In a skillet, brown the ground chicken or beef over medium heat until fully cooked.
  3. Drain any excess fat and add the black beans, corn, diced tomatoes, and taco seasoning. Cook for 5 minutes until heated through.
Assembly
  1. Layer the cooked rice in bowls, followed by the meat mixture.
  2. Top with shredded cheese, diced avocado, cilantro, and any other desired toppings such as sour cream or jalapeños.
  3. Serve warm and enjoy!
