Ingredients
  

For the Potatoes
  • 4 large potatoes Choose large, uniform potatoes for even cooking.
For the Filling
  • 1 pound ground beef or turkey Choose your preferred meat.
  • 1 packet taco seasoning Adjust based on your taste preference.
  • 1 can black beans Drained and rinsed.
  • 1 cup corn Drained.
  • 1 cup shredded cheese (cheddar or Monterey Jack) For topping.
  • to taste sour cream For serving.
  • to taste chopped green onions For garnish.
  • to taste salsa For serving.

Method
 

Preparation
  1. Preheat oven to 400°F (200°C).
  2. Wash and poke holes in the potatoes; bake them for about 45 minutes or until tender.
Cooking
  1. In a skillet, cook ground meat over medium heat until browned. Drain excess fat.
  2. Stir in the taco seasoning, black beans, and corn. Cook until heated through.
  3. Once the potatoes are done, slice them in half lengthwise and scoop a bit of the insides out.
  4. Fill the potato skins with the taco mixture and top with cheddar cheese.
  5. Return to the oven for another 10 minutes or until cheese is melted.
Serving
  1. Serve with sour cream, salsa, and garnish with green onions.

Notes

Taco potatoes are versatile and can be customized. Great for meal prep and leftovers can be stored for up to 3 days in the refrigerator.
