Preparation
- Preheat your oven to 400°F (200°C).
- Wash and poke holes in the potatoes with a fork. Bake in the oven for about 45-60 minutes until tender.
Cooking Beef
- While the potatoes are baking, in a skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
- Add taco seasoning and a little water as per package instructions. Stir and cook for a few minutes.
Assembling Taco Potatoes
- Once the potatoes are done, remove from the oven and let cool slightly.
- Cut the potatoes open and fluff the insides with a fork.
- Spoon the taco meat into each potato, top with shredded cheese, and return to the oven for about 5 minutes to melt the cheese.
- Remove from the oven and add diced tomatoes, sour cream, green onions, and any optional toppings you like.
- Serve warm and enjoy!
Notes
Store leftovers in an airtight container for up to 3 days. For best texture, reheat in the oven.
