Preparation
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and poke holes in them with a fork.
- Place the sweet potatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt.
Roasting
- Roast the sweet potatoes in the oven for about 45-60 minutes, or until they are tender.
Filling
- While the sweet potatoes are roasting, mix the ricotta cheese, orange zest, and a pinch of salt and pepper in a bowl.
- Once the sweet potatoes are done, let them cool slightly, then cut them open lengthwise.
- Spoon the ricotta mixture into the sweet potatoes and top with sliced almonds.
