  • 1/4 cup sliced almonds Can substitute with sunflower seeds for nut-free option.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and poke holes in them with a fork.
  3. Place the sweet potatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt.
Roasting
  1. Roast the sweet potatoes in the oven for about 45-60 minutes, or until they are tender.
Filling
  1. While the sweet potatoes are roasting, mix the ricotta cheese, orange zest, and a pinch of salt and pepper in a bowl.
  2. Once the sweet potatoes are done, let them cool slightly, then cut them open lengthwise.
  3. Spoon the ricotta mixture into the sweet potatoes and top with sliced almonds.

Notes
