Ingredients
  

For the Toast
  • 2 pieces Sweet potatoes Choose firm sweet potatoes for the best texture.
  • 2 tablespoons Olive oil For brushing the sweet potatoes.
  • 1 pinch Salt To season.
  • 1 pinch Pepper To season.
Toppings
  • 1 cup Mashed avocado Use ripe avocados.
  • 2 pieces Eggs Fried to your liking.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice sweet potatoes lengthwise into 1/4 inch thick slices.
  3. Place sweet potato slices on a baking sheet and brush with olive oil.
  4. Season with salt and pepper.
Cooking
  1. Bake in the preheated oven for about 25 minutes, flipping halfway through, until fork-tender.
  2. In the meantime, fry the eggs in a pan.
  3. Top baked sweet potato slices with mashed avocado and a fried egg.
  4. Serve warm and enjoy!

Notes

Sweet potato toast can be served with various toppings like smoked salmon or grilled chicken. Store leftovers in an airtight container. Reheat for crispness.
