  • 2 large Eggs Cook to your desired doneness.
  • 2 tablespoons Olive oil For brushing the sweet potatoes.
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Pepper Adjust according to taste.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice sweet potatoes lengthwise into 1/4 inch thick slices.
  3. Place sweet potato slices on a baking sheet and brush with olive oil.
  4. Season with salt and pepper.
Cooking
  1. Bake in the preheated oven for about 25 minutes, flipping halfway through, until fork-tender.
  2. In the meantime, fry the eggs in a pan.
  3. Top baked sweet potato slices with mashed avocado and a fried egg.
  4. Serve warm and enjoy!
