Ingredients
  

For the rounds
  • 4 medium Sweet potatoes Firm and blemish-free
  • 8 oz Goat cheese Soft goat cheese, plain or herbed
  • 1 cup Cherries Pitted and halved
  • 3 tbsp Maple syrup Pure maple syrup for drizzling
  • 2 tbsp Olive oil For roasting
  • 1 tsp Salt To taste
  • 1 tsp Pepper To taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Slice sweet potatoes into rounds and place on a baking sheet.
  3. Drizzle with olive oil, salt, and pepper, then roast for about 25 minutes or until tender.
Assembly
  1. Top each sweet potato round with a spoonful of goat cheese.
  2. Add cherry halves on top of the cheese.
  3. Drizzle maple syrup over the assembled rounds.
  4. Serve warm as an appetizer.

Notes

For added crunch, sprinkle chopped nuts like walnuts or pecans over the assembled rounds before adding the maple syrup. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
