  • 1 lb ground beef You can swap with ground turkey, chicken, or a plant-based alternative.
  • 1 cup quinoa, cooked Rinse before cooking to avoid bitterness; use a 2:1 water-to-quinoa ratio.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Toss the diced sweet potatoes with olive oil, garlic powder, onion powder, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes, until tender.
Cooking
  1. In a skillet over medium heat, cook the ground beef until browned and cooked through. Season with salt and pepper.
Assembly
  1. In a serving bowl, layer the quinoa, roasted sweet potatoes, and ground beef.
  2. Add any optional toppings as desired. Serve immediately.

Notes
