- Peel and slice the sweet potatoes into ½-inch rounds.
- In a mixing bowl, toss the sweet potato rounds with olive oil, garlic powder, salt, and pepper until well coated.
Cooking
- Spread the seasoned sweet potato rounds in a single layer on a parchment-lined baking sheet.
- Roast in the oven for 20-25 minutes, flipping halfway through, until they are tender and lightly golden.
- Once roasted, spread goat cheese on each round. Use a piping bag for a professional presentation, if desired.
- Top each round with a sprinkle of dried thyme and add fresh herbs if desired.
- Serve warm or at room temperature for best results.
