  • 4 cups mashed sweet potatoes Use fresh or canned sweet potatoes, drained well.
  • 1 cup sugar Adjust sweetness to preference.
  • 1/2 cup milk Can substitute with non-dairy milk for vegan option.
  • 1/2 cup melted butter Coconut oil or margarine can be used as a substitute.
  • 2 units eggs Can be substituted with flaxseed meal mixed with water for vegan option.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup mini marshmallows

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine mashed sweet potatoes, sugar, milk, melted butter, eggs, vanilla extract, and salt until smooth.
  3. Pour the mixture into a greased baking dish.
Baking
  1. Bake in the preheated oven for about 25 minutes.
  2. Remove from the oven and sprinkle mini marshmallows on top.
  3. Return to the oven and bake for an additional 10-15 minutes, or until the marshmallows are golden brown.

Notes

Garnish with a sprinkle of cinnamon or a drizzle of maple syrup for an extra touch of flavor. Store leftovers covered in the fridge for up to 4 days, or freeze for up to 3 months.
