  • 1 cup Bell peppers Sliced, any color
  • 1/2 cup Carrots Sliced thinly
  • 1/4 cup Green onions Chopped for garnish
  • 2 tbsp Soy sauce
  • 2 tbsp Oil for cooking Use vegetable or olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. Cook the rice according to package instructions.
  2. In a skillet, heat oil over medium heat.
  3. Season the chicken with salt and pepper, then add to the skillet and cook until browned.
  4. Pour sweet chili sauce over the chicken and stir to coat.
  5. Add sliced bell peppers and carrots, cooking until vegetables are tender.
Serving
  1. Serve the chicken mixture over rice, garnished with chopped green onions.
