  • 4 large tortillas Use gluten-free tortillas if needed.
  • 2 tablespoons olive oil For frying the quesadillas.

Method
 

Preparation
  1. Heat olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet and layer half with BBQ chicken, drizzles of hot honey, and shredded cheese.
  3. Fold the tortilla in half and cook until the bottom is golden and the cheese is melting, about 3-4 minutes.
  4. Flip and cook the other side until golden.
  5. Remove from skillet and repeat with remaining tortillas.
  6. Cut into wedges and serve warm.

Notes

These quesadillas are best served warm with sides like salad or guacamole. To store leftovers, place in an airtight container and refrigerate for up to 3 days.
