Ingredients
  

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground ginger
  • 0.25 tsp ground cloves
  • 0.25 tsp salt
Wet Ingredients
  • 0.5 cup unsalted butter, softened Ensure butter is at room temperature for easy mixing.
  • 0.5 cup granulated sugar Plus extra for rolling.
  • 0.25 cup brown sugar, packed
  • 0.33 cup molasses Can substitute with honey or maple syrup.
  • 1 large egg
  • 1 tsp vanilla extract

Method
 

Prepare the Dough
  1. Mix the softened butter, granulated sugar, and brown sugar in a bowl until light and fluffy.
  2. Add in the molasses, egg, and vanilla extract; mix well.
Combine Wet and Dry Ingredients
  1. In another bowl, combine all-purpose flour, baking soda, cinnamon, ginger, cloves, and salt.
  2. Gradually add this dry mixture to the wet mixture, stirring until well combined.
Shape and Bake
  1. Preheat the oven to 350°F (175°C).
  2. Roll the dough into small balls and then roll them in extra granulated sugar.
  3. Place the balls on a baking sheet lined with parchment paper.
  4. Bake for about 10-12 minutes or until the edges are set.
  5. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Serve cookies warm or at room temperature. They are delicious on their own but pair wonderfully with milk or tea. To store, place in an airtight container for up to a week or freeze for longer storage.
