  • 2 medium summer squashes, sliced Choose firm and vibrant squashes for the best flavor.
  • 1 piece bell pepper, sliced Any color bell pepper works.
  • 1 piece onion, sliced

  • 2 cloves garlic, minced Adds flavor to the stir-fry.

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the sliced onions and bell pepper; sauté for 3-4 minutes until they start to soften.
  3. Stir in the minced garlic and continue to cook for another minute.
  4. Add the sliced summer squashes and season with salt and pepper.
  5. Cook for an additional 5-7 minutes until the squash is tender but still crisp.
  6. Remove from heat and garnish with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet and enjoy. You can also freeze for up to a month after cooling.
