For the zucchini boats
  • 4 medium medium zucchinis Choose firm zucchinis for the best texture.
  • 1 lb ground beef Ground turkey or chicken can be used as alternatives.
  • 1 cup marinara sauce Low-carb marinara sauce can be used for a low-carb version.
  • 1 cup shredded cheese Mozzarella or cheddar for topping.
  • 1 teaspoon Italian seasoning Can substitute with taco seasoning for a Mexican twist.
  • Salt and pepper to taste
  • 1 tablespoon olive oil Used for cooking the ground beef.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Cut each zucchini in half lengthwise and scoop out the center to create boats.
Cooking
  1. In a skillet, heat olive oil over medium heat and add the ground beef. Season with salt, pepper, and Italian seasoning. Cook until browned.
  2. Stir in the marinara sauce and let simmer for a few minutes.
  3. Place the zucchini boats on a baking dish and fill them with the beef mixture.
  4. Top with shredded cheese.
  5. Bake in the oven for 25-30 minutes, or until the zucchinis are tender and the cheese is bubbly.
  6. Remove from the oven, let cool slightly, and serve.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave.
