For the stuffing
  • 1 cup cooked rice
  • 1/2 cup chopped onion Chopped until soft
  • 1/2 cup chopped celery Chopped until soft
  • 1/4 cup dried cranberries Adds sweetness
  • 1/4 cup almonds, chopped Can substitute with other nuts
  • 2 tablespoons butter For sautéing
  • 1 teaspoon salt To taste
  • 1/2 teaspoon pepper To taste
  • 1 teaspoon dried thyme Can substitute with fresh thyme

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, melt the butter over medium heat. Sauté the chopped onion and celery until they become soft and translucent.
  3. In a bowl, combine the cooked rice, sautéed onions and celery, dried cranberries, chopped almonds, salt, pepper, and thyme. Mix well.
  4. Stuff each Cornish game hen with the rice mixture, packing it tightly but not too tightly.
Cooking
  1. Place the hens in a baking dish and cover them with foil.
  2. Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes.
  3. Let the hens rest for 10 minutes before serving.

Notes

Serve with roasted vegetables, creamy mashed potatoes, or a fresh green salad. For a festive touch, add cranberry sauce or serve with a slice of homemade bread.
