Preparation
- Preheat your oven to 375°F (190°C).
- In a skillet, melt the butter over medium heat. Sauté the chopped onion and celery until they become soft and translucent.
- In a bowl, combine the cooked rice, sautéed onions and celery, dried cranberries, chopped almonds, salt, pepper, and thyme. Mix well.
- Stuff each Cornish game hen with the rice mixture, packing it tightly but not too tightly.
Cooking
- Place the hens in a baking dish and cover them with foil.
- Bake for 45 minutes, then remove the foil and bake for an additional 15 minutes.
- Let the hens rest for 10 minutes before serving.
Notes
Serve with roasted vegetables, creamy mashed potatoes, or a fresh green salad. For a festive touch, add cranberry sauce or serve with a slice of homemade bread.
