Preparation
- Preheat your oven to 375°F (190°C).
- Prepare the stuffing mix using chicken broth according to package instructions.
- Make a pocket in each chicken breast by slicing them horizontally without cutting all the way through.
- Stuff each breast with the prepared stuffing. If using, add grated cheese inside the pocket.
- Season the outside of the chicken breasts with salt and pepper.
Cooking
- Heat olive oil in a skillet over medium heat, then sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake in the oven for 25-30 minutes until fully cooked (internal temperature should reach 165°F or 75°C).
Serving
- Serve with rich gravy on top.
Notes
For even cooking, pound the chicken breasts to an even thickness before making pockets. Store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to three months.
