  • 1 cup sweet corn, grilled or canned
  • 1 large cucumber, diced
  • ½ cup red onion, finely chopped
Dressing Ingredients
  • ½ cup mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon cilantro, chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (to taste)
  • ½ teaspoon black pepper
  • optional crumbled feta cheese for garnish

Method
 

Preparation
  1. In a large mixing bowl, combine the diced chicken, sweet corn, cucumber, and red onion.
  2. In a separate smaller bowl, whisk together the mayonnaise, Greek yogurt, lime juice, cilantro, smoked paprika, salt, and black pepper until smooth.
  3. Pour the creamy dressing over the chicken and vegetables. Gently toss everything together until all ingredients are well coated.
  4. If you like, sprinkle crumbled feta cheese on top for an extra burst of flavor.
  5. Cover the salad and refrigerate for at least 30 minutes to let the flavors meld before serving.

Notes
